NEW VIDEO ALERT! 🌶️ Today, I test two versions of the viral JALAPEÑO POPPER CASSEROLE by Instagram creator @benjixavierr . He’s lost over 100 pounds watching his diet and controlling calories, so I thought it might be fun to convert his popular #highprotein comfort casserole into a #lowcarb version for #keto diets. The base of his casserole is broccoli 🥦 so I only had to change a few things to lower the carb count. I made two different versions of the altered recipe - one with the cottage cheese like the original, and a second one using ricotta cheese (for those out there that are tired of the cottage cheese invasion.) I often get comments asking what protein powder I use, particularly in #lowcarb and #keto recipes. There are a lot of strong opinions about what makes a “good” protein powder, but most of us agree that the fewer ingredients, the better. I was introduced to Equip Prime Protein way back in 2020. Though their packaging has changed, their quality has not. (I liked their old bag artwork better, but don’t tell them that!)
I usually prefer unflavored protein for use in baked goods and other recipes, but they also have flavored varieties of their super-clean, grass-fed beef protein powder. (Their low-sugar options are sweetened with stevia.) Regardless which flavor you choose, there’s never more than five ingredients.
